A Lunchtime Success

It looks unassuming, right? It's just a bowl of macaroni and cheese. But what you can't see is that it's a bowl of Not The Stuff that Rhymes with Raft and Starts with a K...and it actually tastes good. What you also can't see are the ten boxes I cooked before this one that weren't tasty. (My secret? A handful of broccoli, a handful of cheddar, and a big ol' scoop of ricotta, plus the usual Magic Cheese Powder. Mmmmm.)

However, the biggest reward? A lunch my little dude adored.

Priceless.

  1. The true test of whether a meal is a success is whether or not the kiddies loved it. :)

  2. Hey, if he likes it, you've got a keeper. So hard to feed kids sometimes

  3. You know, I STILL use the cookbook "First Meals" by Annabelle Karmel (required by the dietitian way back when). It's great for veggie recipes like this.
